Ha Mai Lo Mai Kai 糯米鸡 (steamed savoury glutinous rice with dried shrimps)




Before I go for a short trip and another long trip from next week onwards, I just like to take some time here to update few posts by this week. This morning after i sent my son and daughter to the church where they will have a 4 days 3 nights Camporama 2012  camp ( wish i still young, so i can also join this fun camp ^_^), we went to a nearby coffee shop (quite a famous shop actually) to take our breakfast..I think this will be my last time visit this coffee shop, because we noticed all the food stalls there almost run by foreign workers. Some of the boss either sit there to collect money only or the whole stall is running by their foreign workers (i saw one of the stall owner operated another stall in my area)...Even nasi lemak stall also the same. Foods there start to loosing their nice taste and no more authentic..

Come back to today's post, one of my reader asked me how to prepare Ha Mai Lo Mai Kai (dried shrimps steamed glutinous rice). I add Ha Mai/ Hae Bi (dried shrimps) in steamed savoury glutinous rice but i have never add it in Lo Mai Kai (famous dim sum item, steamed glutinous rice in bowl) before.

The other day i saw Jane prepared her Lo Mai Kai in cute and mini size, I like her idea. After I received the Mei Hua shape metal bowls from Sherleen ( we were played exchange gifts actually, hehehe) ..I quickly take this small bowl to prepare this mini size of Ha Mai Lo Mai Kai..Last time when i prepared the normal size LMK, my little son Desmond can't even finish one but this time he ate at least 4 of LMK and he told me that this LMK is yummy..Also i decided to chop mushroom into small sizes and mix it with the rice, because i noticed when i put a whole piece or half piece of mushroom, my kids will not eat the mushroom, but this time they eat everything. Because the were not realized that the mushroom was in the rice actually, hahaha..
And i also omitted the Chinese sausages which my family don't appreciate it much..


Ha Mai Lo Mai Kai (steamed savoury glutinous rice)

Ha Mai Lo Mai Kai (steamed savoury glutinous rice with dried shrimps)

500g glutinous rice, wash clean and soak for 4hours (do not need to soak overnight)

Marinate chicken
Ha Mai Lo Mai Kai (steamed savoury glutinous rice) 2 chicken thighs, cut into small bite-size
1tbsp ginger juice
1tbsp oyster sauce
1/2tbsp light soy sauce
1tsp Chinese cooking wine
1/2tsp salt or to taste
1tsp sesame oil
A dash of white pepper powder
1tbsp potato flour or cornstarch

10pcs Chinese dried mushrooms (soak in water to shorten, rinse few times), chopped small
20g dried shrimps, soak for 5mins, lightly chopped
4 shallots, slices

Seasonings for rice
2tbsp shallot oil
1tbsp oyster sauce
2tbsp light soy sauce or to taste
2tbsp dark caramel sauce
3tbsp sugar
1 and 1/2tsp salt or to taste
1tsp chicken stock powder
400ml water or adjust accordingly

Method
1. Mix all seasoning with chicken, set aside for 1 hour.
2. To sauté the shallots with oil, remove the fried shallots.
3. Use the same oil, to sauté the dry shrimps and mushroom till fragrant. Remove the fried dried shrimps and shallot oil.
4. Mix all seasoning, mushroom, fried dried shrimps, water and glutinous rice in a rice cooker.
5. Cook glutinous rice in rice cooker and fluff the rice with a fork when rice is cooked.
6. To assemble Lo Mai Kai- place 1-2 pcs of chicken, cover with cooked glutinous rice.
7. Add 1-2tbsp water on the rice, steam over medium high heat for 30mins.
8. Turn out Lo Mai Kai on a plate and serve hot.

My note- if you don’t own a rice cooker, you may steam the rice with water over medium high heat for 45mins.

    Oh, I was looking for another version of LMK recently and now you post yours. I remember I made once using your recipe and of course I am going to make this recipe too. I loves LMK very much.

  2. I like to eat LMK, LMK must be the 1st choice when i eat dim sum. I understand after eat the LMK will no have space to eat others dim sum, but i really can't control it..hehehehe

    LMK is one of my family's favorite dim sum too.
    Your LMK look so delicious.
    I like your Mei Hua metal bowl it is so cute. I guess it's not only for making LMK cute, make 'fatt guo' also very cute and nice..

  8. I agree with you, nowadays food stalls especially those in food court in shopping mall all prepared by the foreign workers. Sometime I want to eat also "sian". I know you are going to Melaka and if you saw 娇娇blog talking abt the Charlie nyonya kuih, I also lost interest because the owner dosen't make it anymore. When you go to his house, you will see a few indonesia girls are there to make all the kuihs. The aunty is there just to collect money.

    By the way the LMK looks very yummy. Yes, u r right adding the mushroom into the rice make it more fragrance and easy to eat. ( Yes Yes, Sherleen also bought me this mould I can do lmk already)

  12. haha, my mum also prepared the LMK by cutting mushrooms to smaller pcs. I like it this way because can taste the mushrooms every bite!

  15. I share the same views with you and Li Shuan about foreign workers preparing/serving food at foodstalls. It happens also at big restaurants/hotels. The 'personal touch' and rapport doesn't exists anymore. Really 'sian' when we pay so much and can't get the expected service. Your LMK, I like. I have some lotus leaves, can I use them to wrap the rice?

  18. I think it's only the second savoury recipe with glutinous rice I see and it looks like a particularly good one! I have lots of this rice at home so I'm very grateful for this great recipe.

  20. very nice. lay nua liao lo. I like to make things in small size. May be bcoz of my own body size also small. hehe... feel that easier to eat n can try other foods if there are more food at one time.
    This is the shop that i used to shop in melaka. But recently there is another new shop which sells cheaper n more variety of baking hardware but can't find the name n address. Sorry.

  23. Hmmm, I was trying to dapao loh mai kai for my grandma last monday. But somehow I went there the dim sum girl said finished. So can I order one from you? Or it is ok you send me one? hehehe. My son also lvoe loh mai kai...but never taste har mai one.

    I like your LMK becoz I don't like the chinese sausage,it feels like eating rubber so adding dried shrimp is my fav choice.

    X'mas has come early for you & Sherleen? I feel so pai seh as I still haven't used your angku kuih mould. If I make this, no one at home will eat for me, that's why I need to wait for the right timing & give some to my M'sian friend here.

  34. I like having this kind of LMK with curry gravy.lol. They normally selling this kind of LMF with char siew & peanuts. I also love the sweet ones. You know, the white sweet &salty sticky rice with kaya. Truly mouthwatering. I think we M'sian prefer street food~lah! haha...

  35. Don't laugh but Lo Mai Kai is one of few Chinese words that I had to remember for survival. Yes, for dim sum order! I love this so much, and ate a little too much that I kind of stop eating for a while... now with your delicious photo, I think I'm ready to eat again!
